蛋黄咸肉粽
材料
米 1200g
葱头子 250g
蒜头 100g
糖 1Tbsp
生抽 1Tbsp
五香粉 少许
油 6Tbsp
盐 3/4Tbsp
味精 1 ½ tsp
麻油 ¼ tsp
胡椒粉 2tsp
老抽 1Tbsp
做法:
1. 米洗干净,正在水3小时,滤干水份待用。
2. 用8Tbsp的油炒香葱头和蒜头粹,然后加入上述的米炒一会,再加入调味料炒香取出待冷。
肉馅
五花肉 800g
盐 1tsp
麻油 1/2tsp
五香粉 3/4tsp
芫茜粉 1/2tsp
味精 3/4tsp
糖 1tsp
胡椒粉 2tsp
生抽 1Tbsp
老抽 1tsp
做法:
1. 将肉切块,用5Tbsp油炒香,然后加入调味料炒香取出来。
2. 冬菇20朵,正软后加入盐1/4tsp,糖1tsp,油1Tbsp,腌20分钟。
3. 栗子200g用水正隔夜,以水加入2Tbsp糖,慢火煮至熟即可。
