Method
方法

1) Heat up 4 tbsp oil, sauté minced shallot and garlic
烧热4汤匙油,爆香葱蒜碎

2) Stir fry shrimp till aromatic, add seasonings (ingredients C), turn off flame
下虾仁炒香,加入调味料拌均,熄火

3) Add diced chives 10 min later, mix well, dish up
待10分钟后,加入韭菜粒拌均,盛起待用

Tapioca Flour 30g
薯粉

Method
方法

1) Divide rice noodle into 2 – 3 portions, place inside a blender with knife blade blend to form dough
把米台目分2 – 3 次放进刀形搅拌器内搅至成团

2) Put dough on table top, work tapiaco flour into dough till dough turn soft
把面团放在桌面上,加入薯粉搓软

3) Sprinkle some tapiaco flour on table top, roll out dough to a thin sheet, cut into shape with a round cutter
在桌面上洒些粉,把面团棍薄,然后用圆型切割器切成圆片

4) Wrap in fillings, fold over to form semi circle, press round corner to seal
包入馅料,折成半月形,边缘捏紧

5) Place on pre-greased plate(pic 4), steam in a steamer over medium flame for 10 min
放在已搽上油的盘上(pic 4),送入蒸锅,以中火蒸10分钟

6) Remove and brush with shallot oil, serve
取出扫上葱油即可享用

Glutinous Rice Layer Ingredients
糯米饭材料

Banana sliced 180g
香蕉切片

Thick coconut milk 150ml
浓椰浆

Salt 1 ½ tsp


Glutinous rice 300g
糯米

Water 50ml


Pandan leaf 5 blades
香兰叶

Panadan Layer Ingredients
香兰粉浆材料

Rice flour 60g
粘米粉

Thick coconut milk 400ml
浓椰浆

Egg 1 no
鸡蛋

Corn flour 110g
玉米粉

Pandan juice 80ml
香兰汁

Syrup
糖浆

Castor sugar 180g


Water 350ml


Method
做法
1. To prepare the glutinous rice layer, drain the soaked glutinous rice and place in a steaming tray. Pour coconut milk, water , salt and pandan leaves in the rice and steam over high heat 25 minutes.
准备糯米饭: 将糯米盛起,沥干,铺在蒸盆上,加如椰浆,清水,盐和香兰叶,以大火蒸25分钟。

2. Flake the steamed rice with fork, add in sliced banana, mix well, then transfer mixture into a greased 8 inches round cake tin lined with banana leaf.
将蒸过的的糯米饭用叉子,加入香蕉拌匀,然后把混合物倒在一个已食油及铺了香蕉叶的8寸圆形蒸盘里。

3. Press down to compact the rice, return to the steamer. Covered and steam for 5 minutes.
把糯米饭压紧,继续蒸5分钟。

4. To make pandan layer, combine all the pandan layer ingredient ingredients in a mixing bowl. Add syrup. Strain well.
准备香兰粉浆 : 把香兰粉浆材料拌均匀,加入糖水,过滤。

5. Pour the pandan batter mixture over the banana glutinous rice layer and steam over medium heat for further 35 minutes till cooked. Remove from heat. Leave to cool, cut and serve.
将班兰拉面糊倒在糯米上,盛入蒸炉,盖上,以中火蒸35分钟至熟,取出,冷却后即可切块食用。
