Banana Bread香蕉面包

Ingredient A

Banana 380g
香蕉

Castor sugar 270g


Egg 180g
鸡蛋

Ingredient B

Fresh Milk 160g
鲜奶

Ingredient C

Flour 400g
面粉

Baking soda 6g
苏打粉

Corn oil 100g
玉米油

Method
做法

1. Whisk (A) until well combine then add in milk and whipping cream to combine, slowly pour on the bread, sprinkle raisin.
打(A)至均匀,加入(B),然后jiaru(C).最后倒入玉米油拌均匀。

2. Pour into a 10”square mould.
倒入10寸四方烘盘。

3. Bake at 170 degrees
再以170温度烘烤40分钟。

Ingredient
材料

High protein flour 450g
高筋面粉

Yeast 2tsp
快速酵母

Castor sugar 100g
幼糖

Salt ¼ tsp


Egg 2
鸡蛋

Filled milk 50ml
奶水

Butter 50g
牛油

Water 100ml
温水

Method
做法

1. Sieve the flour. Add in all the ingredients. Slowly pour in filled milk and water, Use slow speed to knead into dough.
面粉过筛加入上述所有材料慢慢倒入奶水和水以慢速度搅拌成面团。

2. Put the dough into a greased tray. Ferment for 1 hour. Turn over the dough and ferment for another half an hour.
面团抽至光滑后,加入抹油的盆内,待醒发1小时。必须进行翻面过程,在继续发30分钟。

3. Let the dough to ferment into 2 to 3 size. Rub with eggs. Bake till golden colour.
面团发酵膨胀至2-3倍大即可扫上蛋液,入烘炉约成金黄色即可。

肉桂粉

Almond Flakes 100g
杏仁片

H/P Flour 1,000g
高筋粉

Sugar 180g


Emplex 15g
面包改良洗发剤

Cold Water 550g


Milk power 20g
牛奶粉

Margerine 100g
菜油

Instant yeast 15g
酵母

Salt 1 tsp


Egg 1 no
鸡蛋

Method
方法

1. Mix the above ingredients till a smooth dough, rest for 10 minutes.
Divide the dough into 40gs each, arrange in a baking tin, rest for 20-30 minutes.
Apply egg yolk on top of bread, 160 degrees and bake for 20 minutes.
将以上全部用料搅均匀.搁置一会儿,即将粉面团分成40克小球形,排列在烘盘内,待发至双倍大.然后扫上蛋液,便可以以160度火烘20-25分钟.

Emplex 1 tsp
面包改良洗发剤

Castor sugar 100 g


Instant yeast 15g
酵母

Salt 1 tsp


Crisco shortening 1 Tbsp
菜油

方法

1. Mix the above ingredients till a smooth dough, rest for 10 minutes.
Divide the dough into 40gs each, arrange in a baking tin, rest for 20-30 minutes.
