港式小笼包

Ingredient
材料


Flour 300g
面粉

Lean shred pork 450g
猪肉粹

Ginger sauce 1Tbsp
姜汁

Seasoning
调味料

Sesame oil 1Tbsp
麻油
Salt 1tsp


Sugar 2tsp


Wine A bit
绍兴酒

Stock 6Tbsp
上汤

Method
做法

1. Add salt to flour. Divide into half portions. Use hot water to make into dough. Use cold water to knead the other half of the flour into dough. Mix the 2 portions. Rest for 30 minutes.
将面粉加入盐,把一半的面粉用开水开成面团。在另外一半面粉用冷水开成面团。两份才合成团待休息30分钟。

2. Blend shredded meat, ginger oil, sugar and wine. Mix evenly. Add in stock, sesame oil and blend. Put inside a fridge. Roll and press the dough into thin sheets. Scoop half table spoon filing(meat) on top and wrap into pau.
把肉粹,姜汁,盐,糖和绍兴酒参在一起拌均匀,加入山汤拌均匀后再加上麻油搅拌后放进冰箱。再把面团杆成面皮。每张面皮上放上汤匙肉馅然后将它包好。

3. Place banana leave on a steaming trap. Display the pau on top. Use strong heat to steam for 10 minutes.
蒸笼里铺上香蕉叶摆上小笼包用大火蒸10分钟就可以上桌。
