Teochew Moon Cake 潮式梅香月饼

Filling馅料

Ingredient A

Mui Choy, soaked 2 hours, chopped 100g
梅菜浸泡2个小时,切碎, 炒干

Candied mandarin orange, chopped 100g
橘饼,切碎

Candied winter melon, chopped 100g
冬瓜糖,切碎

Ingredient B

Melon seeds
瓜子 50g

Sesame seeds, toasted 3tbsp
芝麻,炒香

Ingredient C

Skin A
油皮

Plain flour 100g
面粉

Shortening 100g
白油

Ingredient D

Skin B
水皮

Super fine flour 150g
底筋面粉

Caster sugar 40g
幼糖

Salt 1tsp


Baking soda 1/2 tsp
苏打粉

Shortening 50g
白油

Egg, beaten with a little salt 1no
鸡蛋,加少许盐打散,抹皮用

Water 80ml


Ingredient E

Lotus seeds paste 1.4Kgs
莲蓉(或豆沙)



Methods
制法

1. Add in A and B to E and mix well. Divide the filing into small portions of about 120g each and
round up.
加入A ,B料 和 E料拌匀。分成每份120克。

2. Skin A - Combine plain flour, shortening and mix into a dough. Divide into 10 portions.
油皮- 将面粉和白油一起加入搅拌碗中拌匀成团,分成10份。

3. Skin B – Put super fine flour, casters, salt and baking soda into mixing bowl and mix well. Add in
shortening and mix until resembles bread crumbs. Slowly pour in water and mix into a dough.
Rest for 15 minutes. Divide into 10 portions.
水皮 – 将底筋面粉,幼糖,盐和苏打粉搅拌拌匀,加入白油搓成团圆状,徐徐加
入 水拌成团,休息15分钟,分成10份。

4. Wrap a portion of skin B with a portion of skin A and form into round. Roll into oblong shaped
and roll up like Swiss roll. Roll out into oblong shape and roll out into round sheet, wrap up filling
and shaped into round, flatten slightly and place onto a greased baking tray.
将一份油皮包入一份水皮里,擀成长形,卷起后再次擀长。之后卷起用手稍压扁
后擀成圆形薄片,包如馅料(A,B和E),揉圆,压扁,放在已涂油的烘盘上。

5. Glaze moon cake with beaten egg for decoration. Bake in a preheated oven at 180 degrees for
20~25 minutes.
月饼抹上蛋液,撒上芝麻饰后送入已备的烤炉,以180度烘烤大约20~25分钟。

6. Remove and leave to cool before serving.
取出待冷后享用。
