




Shanghai Moon Cake
上海月饼
Ingredients
材料
Flour 260g
面粉
Custard powder 30g
卡士特粉
Baking powder 1/2tsp
发粉
Sugar 75g
糖粉
Egg 70g
鸡蛋
Lotus seed paste 900g
莲蓉(或豆沙)
Butter 45g
牛油
Shortening 90g
白油
Ammonia 1/2tsp
臭粉
Vanilla 1/4tsp
香精粉
Shelled melon seeds 50g
瓜子
Cooked salted egg yolks 10nos
咸鸭蛋
Method
方法
1. Sift the flour and make a well in the centre.
面粉,卡士特粉, 发粉同筛开穴。
2. Put in the sugar, egg, butter and ammonia to mix thoroughly.
中间放入糖,蛋,牛油和臭粉拌匀。
3. Gradually draw in the flour to knead into a soft dough and put aside for 15 minutes.
慢慢加入面粉压成团,待15分钟后分成10个份。
4. Divide the dough into 10 portions to wrap in the fillings.
取一份粉皮慢慢包入一份莲蓉馅逐个完成。
5. Put into 180 oC oven to bake for 10 minutes, then spray some water on the moon cake. Brush
each cake with a thin layer of the beaten egg yolk. Return the tray into the oven to bake for
another 10 minutes.
以180温度之火候烘10分钟后喷水和扫蛋 。过后再烘10分钟即可。
