Lotus seed 600g
湘莲

Sugar 580g


Groundnut 2 ¾ cup

Maltose 2Tbsp
麦芽糖

Alkaline 1Tbsp

Method
方法

1. Add lotus seeds with alkaline water and 3 Tbsp of plain water, leave for 20 minutes. Add in 3 bowls of water, cover it bring to boil for 15 minutes. Wash away the lotus seed’s skin and add in 2 ½ bowl of water steam till the lotus seeds soften. Blend well.

先将湘莲加入1汤匙碱水与3汤匙水拌均,搁置20分钟然后加入3碗水煮沸立刻加盖局15分钟于是洗去莲衣用2 ½ 碗水蒸至熟烂。将煮烂之莲子连同水倒入搅拌器打至摩烂。

2. Heat the work, pour in 50ml of water, add in sugar, cook till the mixture become syrup, then add in the blended lotus seeds and fry till water dry slowly add in oil mix then dish out.5. Add in maltase stir well.

热锅倒入50ml的水,加入糖使成为核黄色便将莲子泥倒入,炒至水份点干,即可逐步加入油炒至离锅再加入麦芽糖拌匀即成。

Method
方法

1. Blend high protein flour and low protein flour together. Add in icy sugar,
shortening, water. Blend evenly. Knead into dough, leave for half hour to
fragment.
将粉料混合均匀加入糖粉,白油再扳入水,搓拌成团,待发30分钟。

2. Mix low protein flour (oily skin), shortening and blend. Knead till not sticky.
将低筋粉,白油分成混合拌匀搓揉至白油不黏手即可。


3. Divide water skin and oily skin ingredient into portions required. Wrap
shortening on to water skin dough. Use both hands to press.
将水皮油酥分成所需要之大小,把水皮包油酥,双手压住水皮周围。由外往内合紧。

4. Put into 170 oC oven to bake for 10 minutes, then brush each cake with a thin
layer of the beaten egg yolk. Return the tray into the oven to bake for another 10
minutes.
以180温度之火候烘10分钟后扫蛋 。过后再烘10分钟即可。

Method
方法

1. Boil agar-agar powder, water, sugar, lychee (blend) until boiled. Add in coconut
cube.
菜燕粉,水菜燕精,水和糖煮溶。加入奇异果煮沸即成馅料。将椰果蜜适量分配放入模中,才倒入(2)料即成馅料。将所有的皮料一起煮
沸备用。


2. Pour a little(1) onto a mould. Leave to cool, Then add in(1) and pour another (2)
onto mould.
先倒入一点(1)料在一月饼模中待不粘手,放入馅料再倒入(1)料即成。

1. Cook agar-agar powder, water together until dissolves. Add in kiwi puree.
菜燕精,水和糖煮溶。加入奇异果煮沸即成馅料。

2. Add in green colouring and condensed milk. Then add in hot water to well and fold in agar-agar water make a skin.
将水,糖,菜燕粉煮沸, 加入青色素和炼奶拌匀。

3. Pour a little(2) onto mould. Leave to cool. Then add in (1) and pour another (2)
onto mould.
先倒入一点(2)料在一月饼模中待不粘手,放入馅料再倒入(2)料即成。

将上述的材料以小火煮30分钟,然后置放1个星期始用。

做法

1. Sliced the yam and steam it. Blend the yam and other ingredients together till well.
将芋头切片蒸熟,放入搅拌器加入糖,汀面粉及油一同大烂。

2. Fried it.
热锅加入芋泥,炒至干离锅即可。

Shortening 90g

Ammonia 1/2tsp
臭粉

Vanilla 1/4tsp
香精粉

Shelled melon seeds 50g
瓜子

Cooked salted egg yolks 10nos
咸鸭蛋


Method
方法

1. Sift the flour and make a well in the centre.
面粉,卡士特粉, 发粉同筛开穴。

2. Put in the sugar, egg, butter and ammonia to mix thoroughly.
中间放入糖,蛋,牛油和臭粉拌匀。

3. Gradually draw in the flour to knead into a soft dough and put aside for 15 minutes.
慢慢加入面粉压成团,待15分钟后分成10个份。

4. Divide the dough into 10 portions to wrap in the fillings.
取一份粉皮慢慢包入一份莲蓉馅逐个完成。

5. Put into 180 oC oven to bake for 10 minutes, then spray some water on the moon cake. Brush
each cake with a thin layer of the beaten egg yolk. Return the tray into the oven to bake for
another 10 minutes.
以180温度之火候烘10分钟后喷水和扫蛋 。过后再烘10分钟即可。
