客家算盘子

Ingredient A
材料A

Yam 800g
芋头
(Cut into chunks,
steamed until soft &
mashed finely)
(切块,蒸软,压烂)

Tapioca flour 200g
木薯粉

Water 2500ml


Oil 2Tbsp


Chpped garlic & shallots 4Tbsp
葱蒜头

Meat 200g(soaked & shredded)
猪肉 (切丝,浸软)

Mushrooms 3(soaked & shredded)
冬菇 (切丝,浸软)

Black fungus 3 Tbsp(soaked & shredded)
黑木耳 (切丝,浸软)

Seasoning
调味料

Fish sauce 1Tbsp
鱼露

Pepper 1tsp
胡椒粉

Chicken stock granules 1Tbsp
鸡晶

Seasame oil 1/2tsp
蚝油

Water 1 cup


Method
做法

1. Combine all ingredient A and mix into a pliable dough. Divide into small portions and from into the shape of abacus. Cook in boiling water until they can float up. Remove and rinse in cold water. Drain and mix with 2 Tbsp oil. Set aside.
将A料充分搓均匀成软硬适中的粉团,分成一粒粒算盘子形,放入滚水中煮至浮起,捞起过冷水,沥干拌上2汤匙油待用。

2. Heat up 4Tbsp oil, sauté chopped garlic and shallot until fragrant. Add in dried prawns, dried squid shreds and and stir-fry until aromatic. Add minced meat, mushroom shreds, black fungus shreds and stir-fry until fragrant. Add in seasoning and stir-fry until dry. Taste and dish up.
烧热4大汤匙油,放入蒜头,葱,加入虾米爆香,加入肉丝,木耳丝炒香,加入调味料,待滚,放入算盘子炒至干,试味便可上碟。
